AAAAH Salsa
Gardening here in Arkansas is totally new and exciting for us. We got a small garden in with lots of peppers, tomatoes and more peppers for our salsa. We have done pretty good for it being our first year here and now know what we need to improve the soil. Our neighbors helped till an area in the front yard, we had added some compost from the chicken coop and the goat barn to help with the hard pack clay soil, along with straw. The weeds were coming back as a lot of weeding was done thru out . At this time it is pretty warm and dry with no real rain. I have let the tomatoes go but I am trying to get more Jalapenos and hot banana peppers so we can those up as soon as we get enough. I had planted carrots and corn with a few other things but that has not done as well as I had hoped for, whatever is left will go to chickens and goats. It has been fun though and I sure will be ready for next year. We are going to get a greenhouse and start early. I am lucky as I have some wonderful neighbors that love to share in the bounty they have.

We decided to try out something we saw on youtube called Perma-culture. (Planted on 9-18-2011)
It is fairly easy and since we had a lot of free goat manure located near the garden, we fenced in an area with t-post and some fencing field wire, threw on a gate to keep the goats and dogs out, added some more dirt and the last of the 2010 compost....
Here's what you do.....
Place all the seeds in one dish, mixing it up and then tossing it ONTO the ground. Walking on or kicking dirt over the seed,then watering.
Usually you would place "like" varieties that you want to grow in the dish.
It did work and we will be doing this again very soon. One of the easiest gardens I have ever planted
We did this first in Arizona where the conditions are hot and hotter, we will be doing this again here in Arkansas. I am looking forward to this again next year when the weather allows us to.

Extra Zuccinni, lots of it....
I did get a wonderful recipe from my sister Susan for a nice Zuccinni dish that I totally love, it's easy and goes from the pan to the dish in less then 20 minutes. Serves 2-4
Take as much or as little zuccinni that you need for your dish.
1 zuccinni
1 onion
2-3 roasted peppers (New Mexico's is awesome)
1 -2 gloves of garlic
1 potato
1/3 cup oil (vegetable,canola, whatever you use)
Chop/cube all ingrediants, place into a hot skillet, cover for about 10-15 minutes untill zuccinni is cooked thru. potato and onion should be roasted. Add salt and pepper to taste. Continue cooking until done about 5 minutes.
Here's the fun part, you can add anything you have in the fridge.
I like to add cheese, avocado, homemade salsa, and top it off with some sour cream.
Or for a fast and easy Breakfast or Dinner, I add eggs, just after I know the veggies are thoughly cooked. Make sure you cook the eggs completely... then sprinkle with cheese and you have a yummy dish.
Thinking of Fall and Winter harvest, what to plant what to plant ???? Anyone with ideas ??? let me know.
I have thought about trying to grow more cantalope, pumpkins and maybe potatos.
